Ingredients:
For the Mascarpone Cream:
- 1 cup (240 ml) heavy cream, cold
- 1 cup (225g) mascarpone cheese
- ⅓ cup (65g) granulated sugar
- 1 teaspoon vanilla extract
- 4 large egg yolks (optional for traditional richness)
For the Layers:
- 1 ½ cups brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (such as Kahlúa, optional)
- 24-30 ladyfinger cookies (savoiardi)
- Unsweetened cocoa powder (for dusting)
- Dark chocolate shavings (optional, for garnish)
Instructions:
- Make the Coffee Mixture:
- Brew the espresso or strong coffee and let it cool. Stir in the coffee liqueur if using, and set aside.
- Prepare the Mascarpone Cream:
- In a large bowl, beat the heavy cream with an electric mixer until stiff peaks form. Set aside.
- In another bowl, whisk together the mascarpone cheese, sugar, and vanilla extract until smooth and creamy.
- If using egg yolks for a traditional tiramisu, whisk them with the sugar over a double boiler until pale and thick, then mix into the mascarpone.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Dip the Ladyfingers:
- Quickly dip each ladyfinger into the cooled espresso mixture for 1-2 seconds. Don’t soak them too long, or they’ll become soggy.
- Line the bottom of an 8×8 inch dish (or similar size) with a layer of dipped ladyfingers.
- Layer the Tiramisu:
- Spread half of the mascarpone cream over the ladyfingers, smoothing it out with a spatula.
- Add another layer of dipped ladyfingers on top of the cream.
- Spread the remaining mascarpone cream over the second layer of ladyfingers.
- Chill the Tiramisu:
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together.
