Cheesy Vegetable Fritters Recipe
These cheesy vegetable fritters are crispy, flavorful, and perfect as a snack, side dish, or even a light meal.
Ingredients
- 2 cups mixed vegetables (shredded zucchini, carrots, and corn work well)
- ½ cup grated cheese (cheddar, mozzarella, or Parmesan)
- ½ cup all-purpose flour
- 2 large eggs
- 2 tbsp chopped fresh parsley (or other herbs)
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika (optional)
- Salt and pepper, to taste
- 2-3 tbsp olive oil or vegetable oil (for frying)
Instructions
- Prepare the vegetables:
- Shred the zucchini and carrots using a grater.
- Place shredded vegetables in a clean kitchen towel or cheesecloth, squeeze out as much water as possible. This helps the fritters stay crispy.
- Mix the batter:
- In a large bowl, combine the squeezed vegetables, grated cheese, flour, eggs, parsley, garlic powder, onion powder, paprika, salt, and pepper.
- Stir until well combined and the mixture holds together.
- Form the fritters:
- Heat the oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of the mixture for each fritter and flatten slightly into a patty shape.
- Cook the fritters:
- Place the patties in the skillet, leaving space between each fritter.
- Cook for about 3–4 minutes per side or until golden brown and crispy.
- Remove and drain on a paper towel-lined plate.
- Serve:
- Serve warm with sour cream, yogurt, or your favorite dipping sauce.

- Experiment with vegetables like sweet potatoes, spinach, or bell peppers for variety.
- For an extra kick, add chopped jalapeños or a pinch of chili flakes to the mixture.
