Here’s a comforting chicken stew recipe that’s perfect for a cozy meal:
Ingredients
- 2 lbs chicken thighs or breasts, boneless and skinless, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, peeled and sliced
- 2 celery stalks, chopped
- 2 potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 4 cups chicken broth
- 1 cup heavy cream (optional, for a creamier stew)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp all-purpose flour (optional, for thickening)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Prepare the Chicken: Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook until they are browned on all sides. Remove the chicken and set aside.
- Sauté Vegetables: In the same pot, add the chopped onion and cook until softened, about 3-4 minutes. Add the garlic and cook for another 30 seconds.
- Add Carrots and Celery: Add the carrots and celery to the pot and cook for 5 minutes, stirring occasionally.
- Add Potatoes and Broth: Stir in the potatoes and add the chicken broth. Bring the mixture to a boil.
- Simmer: Reduce the heat to low and return the chicken to the pot. Add the green beans, thyme, rosemary, bay leaf, salt, and pepper. Simmer the stew for 30-40 minutes, or until the vegetables are tender and the chicken is cooked through.
- Thicken (Optional): If you prefer a thicker stew, you can mix the flour with a little water to create a slurry and stir it into the stew. Simmer for an additional 5 minutes until thickened.
- Finish and Serve: Remove the bay leaf. Stir in the heavy cream if using, and adjust seasoning with salt and pepper. Garnish with fresh parsley before serving.
Enjoy your hearty chicken stew!
