Baked Chicken with Bell Peppers
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 bell peppers (any color), sliced
- 1 red onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, sliced
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Chicken: Place the chicken breasts in a large bowl. Drizzle with 1 tablespoon of olive oil, and season with oregano, basil, paprika, salt, and pepper. Rub the seasoning into the chicken breasts to ensure they are well coated.
- Arrange Vegetables: In a separate bowl, combine the sliced bell peppers, red onion, and minced garlic. Drizzle with the remaining tablespoon of olive oil and toss to coat.
- Assemble: Arrange the seasoned chicken breasts in a baking dish. Spread the bell peppers and onions evenly around the chicken. Place lemon slices on top of the chicken and vegetables.
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
- Garnish and Serve: Remove the dish from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before serving.
