Baked Coarse Bread Recipe
Ingredients:
- 500g whole wheat flour
- 200g rye flour
- 300g all-purpose flour
- 10g salt
- 15g active dry yeast
- 700ml warm water
- 50ml olive oil
- 1 tbsp honey
- Optional: seeds (such as sunflower, pumpkin, or flax) for topping
Instructions:
- Prepare the yeast:
- In a small bowl, dissolve the honey in the warm water.
- Add the active dry yeast and let it sit for about 10 minutes, until it becomes frothy.
- Mix the dry ingredients:
- In a large mixing bowl, combine the whole wheat flour, rye flour, all-purpose flour, and salt.
- Mix well to ensure an even distribution of the salt.
- Combine wet and dry ingredients:
- Create a well in the center of the flour mixture.
- Pour in the yeast mixture and the olive oil.
- Stir until a dough forms. The dough will be sticky and coarse.
- Knead the dough:
- Turn the dough out onto a lightly floured surface.
- Knead for about 10 minutes, until the dough is smooth and elastic. You may need to add a bit more flour if the dough is too sticky.
- First rise:
- Place the dough in a lightly oiled bowl, turning it to coat all sides with oil.
- Cover the bowl with a damp cloth or plastic wrap.
- Let the dough rise in a warm place for about 1-2 hours, or until it has doubled in size.
- Shape the dough:
- Punch down the dough to release the air.
- Turn it out onto a floured surface and shape it into a round or oval loaf.
- Place the shaped dough on a parchment-lined baking sheet.
- Second rise:
- Cover the loaf with a damp cloth or plastic wrap.
- Let it rise again for about 30-45 minutes, or until it has doubled in size.
- Preheat the oven:
- Preheat your oven to 220°C (425°F).
- Prepare for baking:
- If desired, brush the top of the loaf with water and sprinkle with seeds.
- Using a sharp knife, make a few shallow slashes on the top of the loaf to allow steam to escape.
- Bake the bread:
- Place the loaf in the preheated oven.
- Bake for 30-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Cool the bread:
- Remove the loaf from the oven and let it cool on a wire rack before slicing.
