Here’s a recipe for crispy and delicious Egg Rolls:
Ingredients:
Filling:
- 1 lb (450g) ground pork (or chicken)
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 2 green onions, finely chopped
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1 tsp cornstarch (to thicken)
- Salt and pepper to taste
For Wrapping:
- 12-15 egg roll wrappers (store-bought or homemade)
- 1 egg, beaten (for sealing)
For Frying:
- Vegetable oil (for deep frying)
Optional Dipping Sauce:
- Soy sauce, sweet chili sauce, or hoisin sauce for dipping
Instructions:
Filling:
- Cook the Meat: In a large skillet, heat sesame oil over medium heat. Add ground pork (or chicken) and cook until browned and fully cooked through. Drain any excess fat.
- Add Vegetables: Add garlic, ginger, shredded cabbage, carrots, and green onions to the skillet. Stir and cook for 3-4 minutes, until the vegetables soften.
- Season: Add soy sauce, sugar, and a pinch of salt and pepper. Stir everything together, and cook for another minute. If the mixture is too watery, add 1 tsp of cornstarch to thicken.
- Cool: Remove from heat and let the filling cool for a few minutes.
Wrapping the Egg Rolls:
- Lay Out Wrapper: Place an egg roll wrapper on a flat surface, with one corner pointing toward you (like a diamond shape).
- Add Filling: Place about 2-3 tablespoons of filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides.
- Seal: Brush the top corner with the beaten egg, and roll tightly to seal the egg roll.
- Repeat: Repeat the process with the remaining wrappers and filling.
Frying:
- Heat Oil: In a deep pan, heat about 2 inches of vegetable oil to 350°F (175°C).
- Fry Egg Rolls: Carefully place the egg rolls into the hot oil, a few at a time, and fry for about 3-5 minutes or until golden brown and crispy. Turn occasionally to ensure even cooking.
- Drain: Remove the egg rolls from the oil and place them on a plate lined with paper towels to drain excess oil.
Serve:
- Serve the egg rolls hot with your favorite dipping sauce, such as soy sauce, sweet chili sauce, or hoisin sauce.
