Birria Wings with Consomé Recipe
Ingredients:
For the Wings:
- 2 lbs chicken wings (drumettes and flats)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Birria Sauce:
- 4 dried guajillo chilies
- 2 dried ancho chilies
- 2 dried chipotle chilies (optional for spice)
- 1 small onion, quartered
- 4 garlic cloves
- 2 roma tomatoes, chopped
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 2 cups chicken or beef broth
- 1/4 cup apple cider vinegar
- Salt to taste
For the Consomé:
- Remaining birria sauce
- 1 cup chicken or beef broth
- Fresh cilantro, chopped (for garnish)
- White onion, finely diced (for garnish)
- Lime wedges (for serving)
Instructions:
- Prepare the Wings:
- Preheat oven to 400°F (200°C), or set your air fryer to 390°F (200°C).
- In a large bowl, toss chicken wings with olive oil, garlic powder, onion powder, smoked paprika, cumin, chili powder, salt, and black pepper.
- Arrange the wings on a baking sheet lined with parchment paper or in the air fryer basket.
- Bake or air fry for 25-30 minutes, flipping halfway through, until crispy and golden brown.
- Make the Birria Sauce:
- Remove stems and seeds from the dried chilies.
- In a pot of boiling water, soak the chilies for 10-15 minutes until softened.
- In a blender, combine softened chilies, onion, garlic, tomatoes, oregano, cumin, cinnamon, chicken or beef broth, and apple cider vinegar. Blend until smooth.
- Strain the sauce through a fine-mesh sieve for a smoother texture.
- Simmer the sauce in a pan for 10 minutes to deepen the flavor. Season with salt to taste.
- Coat the Wings:
- Toss the cooked wings in the birria sauce, ensuring they are fully coated.
- Place them back in the oven or air fryer for an additional 5-7 minutes to caramelize the sauce.
- Prepare the Consomé:
- In a saucepan, combine the remaining birria sauce with chicken or beef broth. Simmer for 5 minutes to warm through.
- Garnish the consomé with fresh cilantro and diced white onion.
- Serve:
- Serve the birria wings hot with the consomé on the side for dipping.
- Add lime wedges for squeezing over the wings, and enjoy!
