Ingredients:
- 2 tablespoons olive oil
- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 2 cups (200g) mushrooms, sliced (button or cremini)
- 1 tablespoon all-purpose flour
- 1 cup (240ml) chicken broth
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1 cup (240ml) sour cream
- Salt and pepper, to taste
- 1 tablespoon butter (optional for extra richness)
- Fresh parsley, chopped (for garnish)
- Cooked egg noodles, rice, or mashed potatoes (for serving)
Instructions:
Step 1: Cook the Chicken
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
Step 2: Sauté the Vegetables
- In the same skillet, add the remaining tablespoon of olive oil.
