Ingredients
For the Filling:
- 2 tbsp butter
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 cups cooked, shredded chicken (rotisserie chicken works well)

- 1/2 cup celery, chopped (optional)
- 1/3 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk or heavy cream
- 1 tsp salt

- 1/2 tsp thyme or Italian seasoning
For the Topping:
- 1 package (8-count) refrigerated biscuit dough or
- 1 pre-made pie crust (if preferred)

Instructions
- Preheat the Oven:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Make the Filling:
- In a large skillet over medium heat, melt the butter. Add onions and garlic, and sauté until softened (about 3 minutes).
- Add the flour and stir constantly to make a roux. Cook for 1-2 minutes until golden.
- Slowly pour in the chicken broth and milk, whisking to avoid lumps.
