Here’s a recipe for a delicious Doritos Chicken Casserole:

- 3 cups cooked chicken, shredded (rotisserie chicken works great)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
- 1 ½ cups sour cream
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups shredded Mexican blend cheese
- 1 large bag (about 10 oz) Doritos, crushed (use your favorite flavor, like Nacho Cheese or Cool Ranch)
- 1 small onion, diced (optional)
- 1 can (4 oz) green chilies (optional)
- Fresh cilantro for garnish (optional)
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Prepare the Chicken Mixture:
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, cream of mushroom soup, Rotel tomatoes, sour cream, onion powder, garlic powder, chili powder, cumin, and 1 cup of the shredded cheese. If you’re using diced onions and green chilies, add them in as well. Mix everything until well combined.
- Layer the Casserole:
- Grease a 9×13 inch baking dish. Spread a layer of crushed Doritos on the bottom of the dish.
- Add the chicken mixture on top of the Doritos layer and spread it out evenly.
- Sprinkle the remaining crushed Doritos over the chicken mixture.
- Top with the remaining 1 cup of shredded cheese.
- Bake:
- Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
- Serve:
- Garnish with fresh cilantro if desired. Serve hot and enjoy!
This casserole is perfect for a weeknight dinner and can easily be customized with different types of Doritos or additional toppings like sliced jalapeños or black olives.
