Ingredients:
For the chicken:
- 4 bone-in, skin-on chicken thighs (or drumsticks)
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme (or oregano)
- Salt and pepper, to taste
For the rice:
- 1 1/2 cups long-grain white rice
- 3 cups chicken broth (or water with bouillon)
- 1 small onion, finely chopped
- 2-3 garlic cloves, minced
- 2 tbsp butter or olive oil
- 1 tsp salt (adjust based on broth)
- 1/2 tsp black pepper
Instructions:
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Season the chicken:
- Pat the chicken thighs dry and season them with paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Prepare the rice:
- In a 9×13-inch baking dish, add the rice, chopped onion, minced garlic, butter, salt, and pepper. Pour in the chicken broth and stir to combine.
