Here’s an easy and delicious Burrito Casserole recipe:
Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel)
- 1 can (16 oz) refried beans
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- 1 can (10 oz) enchilada sauce (red or green)
- Fresh cilantro, for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and cooked through. Drain any excess fat.
- Season the Beef: Stir in the taco seasoning, diced tomatoes with green chilies, and refried beans. Mix well and cook for an additional 3-5 minutes, allowing the flavors to combine.
- Prepare the Casserole Dish: In a 9×13-inch casserole dish, spread a thin layer of enchilada sauce on the bottom.
- Assemble the Casserole:
- Lay 2 tortillas in the dish, overlapping if necessary.
- Spread a layer of the beef and bean mixture over the tortillas.
- Spoon a layer of sour cream over the beef mixture, followed by a sprinkle of cheddar and Monterey Jack cheese.
- Repeat the layers (tortillas, beef mixture, sour cream, cheese) until all ingredients are used, ending with a final layer of tortillas on top.
- Top with Sauce and Cheese: Pour the remaining enchilada sauce over the top layer of tortillas. Sprinkle the remaining shredded cheese evenly over the sauce.
- Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil for the last 5-10 minutes of baking to let the cheese get golden and bubbly.
- Serve: Remove from the oven and let it cool slightly. Garnish with chopped cilantro, if desired. Slice into squares and serve.
