Here’s an easy Shepherd’s Pie recipe:
Ingredients:
- 1 lb (450g) ground beef or lamb
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots (or mixed vegetables)
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1/2 cup beef broth
- 1 tsp thyme (optional)
- Salt and pepper, to taste
- 4 cups mashed potatoes (about 4 medium potatoes)
- 1/2 cup shredded cheddar cheese (optional)
Instructions:
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Cook the Meat:
- In a large skillet, cook the ground beef (or lamb) over medium heat until browned. Drain excess fat.
- Add chopped onion and garlic, cooking until the onion is softened, about 3-4 minutes.
- Prepare the Filling:
- Stir in tomato paste, Worcestershire sauce, thyme (if using), and beef broth. Mix well.
- Add frozen peas and carrots (or other mixed vegetables) and cook for another 3-4 minutes until the mixture thickens slightly. Season with salt and pepper.
- Layer the Dish:
- Spread the meat and vegetable mixture evenly into a baking dish.
- Top with a thick layer of mashed potatoes, spreading them evenly over the meat mixture. Use a fork to create peaks on top, which will crisp up in the oven.
- Bake:
- Optionally, sprinkle shredded cheddar cheese on top for a cheesy crust.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and slightly crisp.
- Serve:
- Let it cool for a few minutes before serving. Serve warm and enjoy!
