- 1 tbsp oyster sauce
- 1 tbsp rice wine (or dry sherry)
- 1 tsp sugar
- 1 tsp cornstarch mixed with 2 tbsp water (slurry)
- 1 beaten egg
- Salt and white pepper to taste
- 2 tbsp vegetable oil
Instructions
Making the Fish Balls:
- In a large bowl, mix the finely chopped fish, egg white, cornstarch, soy sauce, rice wine, sesame oil, grated ginger, green onions, salt, and white pepper.
- Mix until well combined and slightly sticky.
- With wet hands, form the mixture into small balls, about 1 inch in diameter.
- Bring a pot of water to a gentle boil. Drop the fish balls into the water and cook until they float to the top and are cooked through, about 3-4 minutes.
- Remove the fish balls with a slotted spoon and set aside.
Making the Lobster Sauce:
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Add the ground pork and cook until it is no longer pink, breaking it up into small pieces.
- Add the garlic, ginger, and green onions. Stir-fry for about 1-2 minutes until fragrant.
- Add the chicken broth, soy sauce, oyster sauce, rice wine, and sugar. Bring to a boil.
- Add the cornstarch slurry to thicken the sauce, stirring constantly.
- Once the sauce has thickened, slowly drizzle in the beaten egg, stirring constantly to create ribbons of egg in the sauce.
- Season with salt and white pepper to taste.
- Add the cooked fish balls to the sauce and gently stir to coat them.
Serving:
- Serve the fish balls in lobster sauce hot, garnished with additional chopped green onions if desired.
- This dish pairs well with steamed rice or noodles.
