Ingredients:
For the Steak:
- 4 beef steaks (such as ribeye or sirloin)
- 2 tbsp green peppercorns (crushed)
- 2 tbsp olive oil
- 1 tbsp butter
- 1 cup beef broth
- ½ cup heavy cream
- 1 tbsp Dijon mustard
- Salt and pepper to taste
For the Potatoes:
- 4 large potatoes (peeled and cut into wedges)
- 2 tbsp olive oil
- 1 tsp dried rosemary or thyme
- Salt and pepper to taste
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Toss the potato wedges with olive oil, rosemary or thyme, salt, and pepper.
- Spread the wedges on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until golden and crispy, turning once halfway through.
- Prepare the Steak:
- Season the steaks with salt and crushed green peppercorns on both sides.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Once the butter is melted and hot, add the steaks. Cook to your desired doneness (about 3-4 minutes per side for medium-rare), then transfer to a plate and cover with foil to rest.
