Ingredients
For the Meatballs:
- 1 lb (450g) ground beef
- 1/2 lb (225g) ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- Olive oil for browning
For the Potatoes:
- 4 medium potatoes, peeled and cut into chunks
- 2 tbsp olive oil
- 1 tsp dried rosemary
- Salt and pepper to taste
For the Sauce:
- 1 can (14.5 oz) crushed tomatoes
- 1/2 cup tomato sauce
- 2 tbsp tomato paste
- 1/2 cup beef broth
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Prepare the Meatballs:
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, basil, salt, and pepper. Mix until well combined.
- Roll the mixture into 1 to 1.5-inch meatballs and set aside.
- Cook the Meatballs:
- Heat olive oil in a large skillet over medium heat.
- Add meatballs in batches, cooking until browned on all sides and cooked through (about 7-10 minutes). Remove and set aside.
- Prepare the Potatoes:
- Preheat oven to 400°F (200°C).
- Toss potato chunks with olive oil, rosemary, salt, and pepper. Spread them out on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and golden, stirring halfway through.
- Make the Sauce:
- In the same skillet used for the meatballs, add a little more olive oil if needed and sauté garlic until fragrant.
- Add crushed tomatoes, tomato sauce, tomato paste, beef broth, basil, oregano, salt, and pepper. Stir well and bring to a simmer.
- Simmer for 10-15 minutes, until slightly thickened.
- Combine Everything:
- Return meatballs to the skillet with the sauce. Simmer for an additional 5 minutes to heat through and allow flavors to meld.
- Serve meatballs with the roasted potatoes on the side.
