Homemade Chicken Enchiladas Recipe
Ingredients:
- 2 cups cooked and shredded chicken
- 1 can (10 oz) red enchilada sauce
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped cilantro
- 8-10 soft corn tortillas
- Optional toppings: sour cream, diced tomatoes, avocado slices, chopped green onions
Instructions:
- Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat some oil over medium heat. Add the chopped onion and bell pepper and sauté until they start to soften, about 3-4 minutes.
- Add the minced garlic, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for another minute until fragrant.
- Add the shredded chicken to the skillet and pour in half of the enchilada sauce. Stir everything together and let it simmer for a few minutes.
- Remove the skillet from heat and stir in half of the shredded cheese and chopped cilantro. This will be the filling for your enchiladas.
- Now, take a corn tortilla and spoon some of the chicken filling onto the center. Roll the tortilla and place it seam side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
- Pour the remaining enchilada sauce over the rolled tortillas in the baking dish. Make sure to spread it evenly to cover all the enchiladas.
- Sprinkle the remaining shredded cheese on top of the enchiladas.
- Cover the baking dish with foil and bake in the preheated oven for about 20 minutes. Then, remove the foil and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
- Once the enchiladas are done, remove them from the oven and let them cool slightly before serving.
- Garnish with your favorite toppings such as sour cream, diced tomatoes, avocado slices, and chopped green onions.
