Lasagne Bolognese
Ingredients:
For the Bolognese Sauce:

- 1 large onion (finely chopped)

- 1 lb (450 g) ground beef
- 1 lb (450 g) ground pork
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste

- 1/2 tsp dried thyme

- 1 bay leaf
For the Cheese Sauce:
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
For Assembly:
- 12-15 lasagna noodles (uncooked or no-boil)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions:
- Make the Bolognese Sauce:
- In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the ground beef and ground pork. Cook until browned, breaking up the meat with a spoon as it cooks.
