Ingredients:
For the Potatoes:
- 4 large russet potatoes
- Olive oil

Instructions:
Baked Potatoes:
- Preheat the oven to 425Β°F (220Β°C).
- Prepare the potatoes: Scrub the potatoes clean, then poke them several times with a fork. Rub them with olive oil and sprinkle with salt. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- Prepare the toppings: While the potatoes bake, cook the bacon until crispy, then crumble. Chop green onions and set aside.
- Assemble the loaded potatoes: Once baked, slice the potatoes open lengthwise and fluff the insides with a fork. Add a pat of butter, then top with shredded cheese, bacon, sour cream, and green onions. Season with salt and pepper, and garnish with chives if desired.
Steak Bites:
- Season the steak: Pat the steak pieces dry and season generously with salt and pepper.
