Ingredients:
For the Curry Paste:
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons Massaman curry paste (store-bought or homemade)
For the Curry:
- 1 lb (450g) beef or chicken, cut into bite-sized pieces
- 1 can (13.5 oz) coconut milk
- 2 cups beef or chicken broth
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1/2 cup roasted peanuts, crushed
- 2-3 potatoes, peeled and cubed
- 1 carrot, sliced
- 1/2 cup chopped tomatoes
- 1/2 cup tamarind paste (or substitute with lime juice)
- 1-2 bay leaves
- 1 cinnamon stick
- Salt to taste
- Fresh cilantro, for garnish
Instructions:
- Prepare the Curry Paste:
- Heat the oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the garlic and ginger, cooking for an additional minute.
- Stir in the Massaman curry paste and cook for another 2 minutes until fragrant.
- Cook the Meat:
- Add the beef or chicken pieces to the pot and cook until browned on all sides.
- Add Liquids and Simmer:
- Pour in the coconut milk and broth, stirring to combine.
- Add the fish sauce, brown sugar, crushed peanuts, potatoes, carrot, tomatoes, tamarind paste, bay leaves, and cinnamon stick.
- Bring the mixture to a boil, then reduce the heat to low. Simmer for 30-40 minutes, or until the meat and vegetables are tender.
- Adjust Seasoning:
- Taste and adjust seasoning with salt or additional fish sauce if needed.
- Serve:
- Remove the bay leaves and cinnamon stick before serving.
- Garnish with fresh cilantro and serve over rice.
