Here’s a fun and delicious Meatball Boats recipe. It’s a great idea for parties or a cozy family dinner!
Ingredients:
- 1 lb (450g) ground beef
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 8 mini baguettes or hoagie rolls (cut a V-shaped wedge on top)
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the meatballs:
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Shape the mixture into small meatballs (about 1 inch in diameter).
- Arrange the meatballs on the prepared baking sheet and bake for 15-20 minutes, or until fully cooked.
- Hollow out the bread:
- While the meatballs are cooking, cut a V-shaped wedge out of the top of each mini baguette or hoagie roll to create a “boat.” Set the wedges aside (you can toast them for dipping later).
- Assemble the boats:
- Once the meatballs are done, reduce the oven temperature to 350°F (175°C).
- Fill each bread boat with a spoonful of marinara sauce. Add 2-3 meatballs per boat, depending on the size.
- Top each with more marinara sauce and sprinkle generously with shredded mozzarella.
- Bake the meatball boats:
- Place the assembled meatball boats back on the baking sheet and bake for another 10-12 minutes, or until the cheese is melted and bubbly.
- Garnish and serve:
- Remove from the oven, garnish with fresh basil leaves if desired, and serve immediately.
