Ingredients:
- 1 lb ground beef (or ground turkey)
- 1 small onion, diced
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels, drained
- 1 can (10 oz) diced tomatoes with green chilies (or salsa)
- 1 cup salsa (your preferred spice level)
- 1 cup enchilada sauce (red or green)
- 2 cups shredded cheddar or Mexican blend cheese
- 8 small corn or flour tortillas, cut in halves or quarters
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
- Sour cream (optional, for serving)
Instructions:
- Preheat Oven: Preheat your oven to 375Β°F (190Β°C).
- Cook the Ground Beef:
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and sautΓ© until softened, about 3-4 minutes.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
- Stir in the taco seasoning and 1/4 cup of water. Cook for another 2-3 minutes until well combined.
- Mix in Beans and Corn:
- Add the black beans, corn, diced tomatoes with green chilies, and salsa to the ground beef mixture. Stir to combine and let it simmer for 5-7 minutes. Season with salt and pepper to taste.
