Ingredients:
- 1 gallon whole milk (not ultra-pasteurized)
- 1 ½ teaspoons citric acid (dissolved in 1 cup of water)
- ¼ teaspoon liquid rennet (or 1/4 rennet tablet dissolved in ¼ cup of water)
- 1 teaspoon salt (optional)
Instructions:
- Prepare the Milk:
- Pour the milk into a large pot and heat it slowly to 85°F (30°C) over medium heat. Stir gently to prevent scorching.
- Add Citric Acid:
- Once the milk reaches 85°F, add the dissolved citric acid. Stir gently, and you should notice the milk beginning to curdle.
- Add Rennet:
