One-Pot Chicken Parmesan Pasta Recipe
This easy, cheesy, and flavorful dish is perfect for a quick dinner.
Ingredients:
- 2 tbsp olive oil
- 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 3 cups chicken broth
- 2 cups marinara sauce
- 1 cup water
- 12 oz penne pasta
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley or basil (chopped, for garnish)
Instructions:
- Cook the Chicken
- Heat olive oil in a large pot or deep skillet over medium heat.
- Season the chicken pieces with Italian seasoning, garlic powder, salt, and pepper.
- Add the chicken to the pot and cook until browned and no longer pink in the center (about 5–6 minutes). Remove the chicken from the pot and set aside.
- Combine the Liquids
- In the same pot, add chicken broth, marinara sauce, and water. Stir to combine and bring to a boil.
- Add the Pasta
- Once the liquid is boiling, add the penne pasta. Stir to prevent sticking.
- Reduce the heat to medium-low, cover the pot, and let the pasta cook for 12–15 minutes, stirring occasionally, until tender.
- Return the Chicken
- When the pasta is almost done, return the cooked chicken to the pot. Stir well to combine and heat through.
- Add the Cheese
- Sprinkle the mozzarella and Parmesan cheeses over the pasta and chicken. Stir gently until the cheese is melted and creamy.
- Garnish and Serve
- Remove the pot from heat and garnish with chopped parsley or basil.
