Pasta Scialatielli con Frutti di Mare (Seafood Pasta Scialatielli)
Ingredients:
- 400g Scialatielli pasta (or substitute with linguine or fettuccine)
- 300g clams
- 300g mussels
- 200g shrimp, peeled and deveined
- 200g squid, cleaned and cut into rings
- 2 garlic cloves, minced
- 1 small onion, finely chopped
- 1/2 cup dry white wine
- 400g cherry tomatoes, halved
- 1/4 cup olive oil
- 1 bunch fresh parsley, chopped
- Salt and pepper to taste
- Red pepper flakes (optional)
- Lemon wedges for serving
Instructions:
- Preparation:
- Clean the clams and mussels by scrubbing the shells under cold running water. Discard any open shells that do not close when tapped.
- Rinse the shrimp and squid. Pat dry with paper towels.
- Cooking the Seafood:
- Heat half of the olive oil in a large pan over medium heat. Add the minced garlic and chopped onion, sautéing until translucent.
- Add the clams and mussels to the pan. Pour in the white wine and cover the pan. Cook until the shells open, about 5-7 minutes. Remove the clams and mussels and set aside, discarding any that did not open.
- In the same pan, add the remaining olive oil and sauté the shrimp and squid for about 3-4 minutes until just cooked. Remove and set aside with the clams and mussels.
- Preparing the Sauce:
- In the same pan, add the cherry tomatoes and cook until they start to soften and release their juices, about 5 minutes.
- Season with salt, pepper, and red pepper flakes if using. Return the cooked seafood to the pan, mixing gently to combine. Allow the flavors to meld together for a couple of minutes over low heat.
- Cooking the Pasta:
- Meanwhile, bring a large pot of salted water to a boil. Cook the Scialatielli pasta according to the package instructions until al dente. Reserve a cup of pasta water before draining the pasta.
- Combining Pasta and Sauce:
- Add the cooked pasta to the pan with the seafood and tomatoes. Toss everything together over medium heat. If the mixture seems dry, add a splash of the reserved pasta water to achieve the desired consistency.
- Sprinkle the chopped parsley over the pasta and toss again.
- Serving:
- Serve the Pasta Scialatielli con Frutti di Mare immediately, garnished with additional parsley and lemon wedges on the side.
