Peanut Butter Amish Cream Pie Recipe
Ingredients:
For the crust
1 1/2 cups all-purpose flour
1/4 tsp salt
1/2 cup unsalted butter, chilled and cut into small pieces
2-3 tbsp ice water
For the filling
1/2 cup creamy peanut butter
1 1/2 cups heavy cream
1 cup milk
1/2 cup granulated sugar
1/4 cup cornstarch
4 egg yolks
1 tsp vanilla extract
Instructions:
For the crust
In a large mixing bowl, combine the flour and salt. Add the butter and blend with a pastry cutter or fork until the mixture resembles coarse sand.
Add the ice water, one tablespoon at a time, until the dough starts to come together. Form the dough into a ball and wrap it in plastic wrap. Chill in the fridge for at least one hour.
Preheat your oven to 375°F (190°C). Once the dough has chilled, roll it out on a floured surface and transfer it to a 9-inch pie dish. Trim the edges and prick the bottom of the crust with a fork a few times. Bake for 20 minutes, or until lightly golden. Let the crust cool completely.
For the filling
In a small saucepan, heat the peanut butter over low heat, stirring constantly, until softened.
In a large saucepan, combine the heavy cream, milk, sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens, about 10-12 minutes.
Meanwhile, whisk the egg yolks in a separate mixing bowl.
Once the cream mixture has thickened, spoon about 1 cup of the hot mixture into the egg yolks and whisk to combine. Pour the egg mixture back into the saucepan and continue to cook for another 2-3 minutes, stirring constantly.
Remove the saucepan from heat and whisk in the vanilla extract and the softened peanut butter until smooth.
Pour the filling into the cooled pie crust and refrigerate for at least 2 hours, or until set.
Before serving, top the pie with whipped cream and a drizzle of peanut butter, if desired.
