Pineapple Cucumber Salad Recipe
A refreshing, sweet, and tangy salad that’s perfect for summer!
Ingredients:
- 2 cups fresh pineapple, diced
- 1 large cucumber, thinly sliced or diced
- ½ red onion, thinly sliced
- ¼ cup fresh cilantro or mint, chopped
- 1 jalapeño, finely chopped (optional, for spice)
- Juice of 1 lime
- 1 tablespoon honey or maple syrup
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions:
- Prepare the ingredients – Dice the pineapple, slice the cucumber and red onion, and chop the cilantro (or mint). If using jalapeño, finely chop it.
- Make the dressing – In a small bowl, whisk together lime juice, honey (or maple syrup), salt, and black pepper.
- Combine the salad – In a large bowl, mix the pineapple, cucumber, red onion, cilantro, and jalapeño.
- Add the dressing – Pour the lime dressing over the salad and toss gently to coat.
- Chill and serve – Let the salad sit for 10–15 minutes in the fridge before serving to allow the flavors to blend.
