Potato Pancakes Recipe
Ingredients:
- 4 medium-sized potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 cup vegetable oil (for frying)
- Optional toppings: sour cream, applesauce, chives
Instructions:
- Prepare the Potatoes and Onion:
- Grate the potatoes and onion using a fine grater.
- Place them in a clean kitchen towel and squeeze out as much liquid as possible. Discard the liquid.
- Mix the Batter:
- In a large bowl, combine the grated potatoes and onion.
- Add the eggs, flour, salt, and pepper. Mix until well incorporated.
- Heat the Oil:
- Heat the vegetable oil in a large skillet over medium-high heat. The oil should be hot but not smoking.
- Fry the Pancakes:
- Drop spoonfuls of the potato mixture into the skillet and flatten them into round pancakes, about 1/4-inch thick.
- Fry for 3-4 minutes on each side, or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve:
- Serve the potato pancakes warm, topped with sour cream, applesauce, or fresh chives.
