Sponge Cake with Vanilla Cream and Herbs
Ingredients
For the Sponge Cake:
- 4 large eggs, at room temperature
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
For the Vanilla Cream:
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
For the Herb Garnish:

Instructions
Preparing the Sponge Cake:
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan, or line it with parchment paper.
- Beat the eggs and sugar: In a large bowl, beat the eggs and granulated sugar together with an electric mixer on high speed until the mixture is thick and pale, about 5 minutes.
- Mix dry ingredients: In a separate bowl, sift together the flour, baking powder, and salt.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the egg mixture, folding gently to combine.
- Prepare milk mixture: In a small saucepan, heat the milk and butter until the butter melts. Remove from heat and stir in the vanilla extract.
