Strawberry Shortcake Roll Recipe
Ingredients:
For the Cake:
- 4 large eggs (room temperature)
- 3/4 cup (150 g) granulated sugar
- 1 tsp vanilla extract
- 3/4 cup (95 g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup (60 ml) milk (room temperature)
- Powdered sugar (for dusting)
For the Filling:
- 1 cup (240 ml) heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 1 1/2 cups (225 g) fresh strawberries (chopped)

Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it. - Make the Cake Batter:
In a large mixing bowl, beat the eggs and sugar with an electric mixer on high speed for about 5-7 minutes, until thick, pale, and tripled in volume. Add the vanilla extract.
Sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture. Finally, gently fold in the milk until fully incorporated. - Bake the Cake:
Pour the batter evenly into the prepared pan and smooth the top. Bake for 10-12 minutes, or until the cake springs back when lightly touched. - Roll the Cake:
While the cake is still warm, turn it out onto a clean kitchen towel dusted with powdered sugar. Remove the parchment paper. Carefully roll the cake up (with the towel) from the short side. Let it cool completely on a wire rack. - Prepare the Filling:
In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Gently fold in the chopped strawberries. - Assemble the Roll:
Once the cake is cool, carefully unroll it. Spread the whipped cream and strawberry filling evenly over the cake, leaving a 1/2-inch border around the edges. Re-roll the cake tightly (without the towel). - Chill and Garnish:
Wrap the roll in plastic wrap and refrigerate for at least 1 hour to set. Before serving, dust with powdered sugar and garnish with extra strawberries if desired.
