White Chocolate Mocha Cake Recipe
Ingredients
For the Cake:
- 2 1/2 cups (310g) all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup (225g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 tablespoon instant coffee granules dissolved in 2 tablespoons hot water
- 1 teaspoon vanilla extract
- 1 cup (240ml) whole milk
- 1/2 cup (90g) white chocolate chips, melted and slightly cooled
For the Frosting:
- 1 1/2 cups (340g) unsalted butter, softened
- 3 cups (375g) powdered sugar
- 1/2 cup (120ml) heavy cream
- 1 teaspoon instant coffee granules dissolved in 1 tablespoon hot water
- 4 oz (115g) white chocolate, melted and cooled
- 1 teaspoon vanilla extract
For Garnish (Optional):
- White chocolate shavings or curls
- Coffee beans (optional)
Instructions
1. Prepare the Cake Layers:
- Preheat the oven to 350°F (175°C) and grease and flour three 8-inch (20cm) round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in the dissolved coffee and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
- Fold in the melted white chocolate until well incorporated.
- Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to wire racks to cool completely.
2. Prepare the Frosting:
- In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, mixing until smooth.
- Mix in the dissolved coffee, heavy cream, melted white chocolate, and vanilla extract. Beat until light and fluffy. Add more cream if needed for a spreadable consistency.
3. Assemble the Cake:
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Repeat with the remaining layers, frosting the top and sides of the cake.
4. Garnish:
- Decorate with white chocolate shavings or curls and coffee beans, if desired.
5. Serve:
- Refrigerate for 30 minutes to set the frosting, then slice and serve.
