Raspberry-Filled Almond Snow Cookies Recipe
These tender almond cookies, filled with sweet raspberry jam and dusted with powdered sugar, are perfect for the holidays or any special occasion. They’re as delicious as they are beautiful!
Ingredients
For the Cookies:
- 1 cup (227 g) unsalted butter, softened
- 2/3 cup (85 g) powdered sugar
- 1 teaspoon almond extract
- 2 cups (250 g) all-purpose flour
- 1/2 cup (60 g) finely ground almonds (or almond flour)
- 1/4 teaspoon salt
For the Filling and Topping:
- 1/2 cup (120 g) raspberry jam
- 1 cup (120 g) powdered sugar, for dusting
Instructions
- Prepare the Dough
- In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
- Mix in the almond extract.
- Gradually add the flour, ground almonds, and salt. Mix until a soft dough forms.
- Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for 1 hour.
- Roll and Cut the Cookies
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Roll out one disc of dough on a lightly floured surface to about 1/4-inch (6 mm) thickness.
- Use a round or shaped cookie cutter to cut out cookies. For half of the cookies, use a smaller cutter to create a “window” in the center.
- Place the cookies on the prepared baking sheets, spacing them about 1 inch apart.
- Bake the Cookies
- Bake in the preheated oven for 8–10 minutes, or until the edges are lightly golden.
- Allow cookies to cool completely on the baking sheets.
- Assemble the Cookies
- Spread a small amount of raspberry jam on the flat side of each solid cookie.
- Dust the “window” cookies generously with powdered sugar.
- Place the powdered sugar-dusted cookies on top of the jam-covered cookies to form a sandwich.
- Serve and Store
- Store the cookies in an airtight container at room temperature for up to 1 week.
- They can also be frozen for up to 3 months.
