This No-Bake Twix Cheesecake is a dreamy combination of a buttery cookie crust, creamy caramel cheesecake filling, rich chocolate ganache, and crunchy Twix pieces on top!
Ingredients:
Crust:
- 2 cups (200g) crushed digestive biscuits or graham crackers
- ½ cup (115g) melted butter
Caramel Cheesecake Filling:
- 16 oz (450g) cream cheese, softened
- 1 cup (250ml) heavy cream
- ½ cup (100g) powdered sugar
- 1 tsp vanilla extract
- ½ cup (120g) caramel sauce
Chocolate Ganache:
- ¾ cup (180ml) heavy cream
- 1 cup (170g) dark or milk chocolate, chopped
Topping:
- 4-5 Twix bars, chopped
- Extra caramel sauce for drizzling
Instructions:
Step 1: Prepare the Crust
- Mix the crushed biscuits with melted butter until combined.
- Press the mixture into the bottom of a 9-inch (23cm) springform pan.
- Chill in the refrigerator for 15 minutes while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large bowl, beat cream cheese until smooth.
- Add powdered sugar, vanilla extract, and caramel sauce. Mix until creamy.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Spread the filling evenly over the chilled crust and refrigerate for at least 4 hours (or overnight for best results).
Step 3: Prepare the Chocolate Ganache
- Heat heavy cream in a saucepan until hot but not boiling.
- Pour over chopped chocolate and let sit for 1 minute.
- Stir until smooth, then let cool slightly before pouring over the cheesecake.
Step 4: Decorate & Serve
- Top the cheesecake with chopped Twix bars.
- Drizzle with extra caramel sauce for a gooey finish.
