Meatloaf with Roasted Potatoes Recipe
Ingredients:
For the Meatloaf:
- 1 ½ lbs (680g) ground beef
- ½ lb (225g) ground pork (optional, for extra flavor)
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- ½ cup milk
- ¼ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp smoked paprika
For the Glaze:
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
For the Roasted Potatoes:
- 1 ½ lbs (680g) baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary or thyme
- ½ tsp salt
- ½ tsp black pepper
Instructions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare the meatloaf: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, onion, garlic, egg, milk, ketchup, Worcestershire sauce, salt, pepper, Italian seasoning, and smoked paprika. Mix until just combined.
- Shape and place on a baking sheet: Form the meat mixture into a loaf shape and place it in the center of the baking sheet.
- Prepare the glaze: In a small bowl, mix ketchup, brown sugar, and apple cider vinegar. Brush half of the glaze over the meatloaf.
- Prepare the potatoes: In a separate bowl, toss the halved baby potatoes with olive oil, garlic powder, rosemary (or thyme), salt, and pepper. Spread the potatoes around the meatloaf on the baking sheet.
- Bake: Place the tray in the oven and bake for 40 minutes.
- Glaze again: Remove from the oven and brush the remaining glaze over the meatloaf. Return to the oven and bake for another 15-20 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C).
- Rest and serve: Let the meatloaf rest for 5-10 minutes before slicing. Serve with the roasted potatoes on the side.
