Bang Bang Chicken Skewers Recipe
Ingredients:
For the Chicken Skewers:
- 1 ½ lbs (680g) boneless, skinless chicken breasts (cut into bite-sized cubes)
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- Wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha (adjust for spice preference)
- 1 tbsp honey
- 1 tsp lime juice
- 1 garlic clove (minced)
Instructions:
- Prepare the Marinade:
- In a large bowl, mix olive oil, soy sauce, honey, garlic powder, paprika, salt, and black pepper.
- Add the chicken cubes and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes (or up to 2 hours for extra flavor).
- Make the Bang Bang Sauce:
- In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, and minced garlic.
- Adjust seasoning to taste, then refrigerate until ready to use.
- Assemble and Grill:
- Preheat the grill to medium-high heat (or use a grill pan).
- Thread the marinated chicken pieces onto soaked skewers.
- Grill for 8-10 minutes, turning occasionally, until chicken is fully cooked (internal temperature of 165°F / 75°C).
- Serve:
- Serve with extra sauce on the side and enjoy!
