Ingredients:
For the salmon:
- 4 salmon fillets
- 2 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Dijon mustard (optional)
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano or thyme
- Lemon slices (for garnish)
For the roasted potatoes:
- 3 cups baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
For the roasted broccoli:
- 2 cups broccoli florets
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp red pepper flakes (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the potatoes:
- In a bowl, toss baby potatoes with olive oil, garlic powder, salt, black pepper, and Italian seasoning.
- Spread them on one side of the baking sheet.
- Roast for 15 minutes first before adding the other ingredients.
- Prepare the salmon:
- In a small bowl, mix melted butter, olive oil, garlic, lemon juice, lemon zest, Dijon mustard (if using), paprika, salt, pepper, and oregano.
- Pat the salmon fillets dry and brush the lemon butter mixture all over them.
- Remove the potatoes from the oven after 15 minutes and push them to one side.
- Place the salmon fillets on the baking sheet and arrange lemon slices on top.
- Prepare the broccoli:
- In a bowl, toss broccoli florets with olive oil, salt, black pepper, garlic powder, and red pepper flakes.
- Spread the broccoli on the baking sheet next to the salmon.
- Bake everything together for 12-15 minutes or until the salmon is cooked through (internal temperature reaches 145°F/63°C) and the potatoes are tender.
