Ingredients:
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small green cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp paprika (optional)
- ½ tsp dried thyme
- ½ tsp dried oregano
- 1 bay leaf
- 1 small potato, diced (optional, for a heartier soup)
- ½ cup chopped parsley (for garnish)
Instructions:
- Sauté the Vegetables
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, and sauté until soft and fragrant (about 2 minutes).
- Stir in carrots and celery, cooking for another 3 minutes.
- Add Cabbage and Broth
- Add chopped cabbage to the pot and stir to combine.
- Pour in diced tomatoes and broth, then add salt, pepper, paprika, thyme, oregano, and bay leaf.
- If using, add diced potatoes for extra heartiness.
- Simmer the Soup
- Bring the soup to a boil, then reduce heat to low.
- Cover and let it simmer for about 25–30 minutes, stirring occasionally, until vegetables are tender.
- Taste and Adjust
- Remove the bay leaf and taste the soup. Adjust seasoning if needed.
- Serve and Garnish
- Ladle the soup into bowls and sprinkle with fresh parsley.
